Our Story
Our Vision. Our Community.
At TunkJoy Bakery, it started with a simple idea: bringing people together.
Owner Sheila Unvala loves to feed people. As a musician, she also dreamed of creating a space where community could gather—not just for good food, but for live music and shared experiences.
Our name came from our location: we are where Tunk Stream flows into Joy Bay. We opened on June 15, 2023.
TunkJoy Bakery was built from Sheila's vision: a place where bread is baked with care, music fills the room, and everyone feels welcome.



From Farm to Oven
The natural progression that brought it all together.
Before opening the bakery, Sheila worked as an organic farmer in Gouldsboro and as a medical laboratory technician in Ellsworth.
That background shows up in everything she does—attention to detail, respect for ingredients, and a deep connection to the land.
We use as much local produce as possible, including from our own gardens and fields. Our flours come from Maine Grains, King Arthur Baking, and locally milled Maine-grown wheat and rye.
Our Bread
Our bread is rooted in tradition and shaped by what’s available close to home.
We’re especially known for our multi-grain loaf, often made with unique inclusions like our own home-grown flint corn—bringing a true taste of this place into every bite.

TunkJoy is more than a place to grab a loaf of bread—it’s a place to stay awhile.
Sheila’s favorite part of the work is simple:
Seeing people enjoying a good meal in good company.
Whether it’s a quiet morning at the bakery or a lively pizza night with music, the goal is always the same: create a space where people feel comfortable, connected, and well-fed.

Live music has always been part of the plan.
TunkJoy Bakery proudly hosts local musicians and traveling artists, creating an intimate venue where music and community come together naturally.

We offer a sliding-scale pricing option so no one goes unfed. We don’t rely on tipping—instead, we pay our staff well. If you’d like, you’re always welcome to “pay it forward” for someone else.
It all comes back to a simple idea:
